1. Cook the Coconut Rice
- Rinse rice and add to a saucepan with water, coconut milk, and a pinch of salt.

2. Crisp the Tofu
- Toss tofu cubes in cornstarch, salt, and pepper.
- Heat oil in a nonstick pan over medium-high.
- Fry tofu for 8β10 minutes, turning occasionally, until golden and crispy on all sides. Set aside.

3. Make the Glaze
- In the same pan, lower heat and add all glaze ingredients.
- Stir and let simmer until slightly thickened (2β3 mins).
- Return tofu to the pan and toss to coat evenly.
4. Assemble & Serve
- Spoon coconut rice into bowls.
- Top with glazed tofu, sprinkle with sesame seeds and scallions.
