  • Spread filling across each thigh, then roll tightly into a cylinder.
  • Tie with butcher’s twine or roll tightly in cling film and refrigerate 20–30 minutes to firm.

3. Sear and Roast

  • Preheat oven to 190°C / 375°F.
  • If using twine, sear the ballotines in a hot pan until golden on all sides.
  • Transfer to oven-safe dish and roast for 20–25 minutes, or until internal temp is 75°C / 165°F.
  • Rest before slicing.

4. Make the Sauce

  • In a small saucepan, simmer shallots with red wine, chicken stock, and sugar until reduced by half.
  • Strain if desired, then whisk in butter. Season with salt and pepper.

5. Serve

  • Slice the chicken ballotine into rounds and plate with red wine sauce. Pair with seasonal vegetables or creamy mashed potatoes.
